От слова United взяли первые 2 буквы и сделали слово Uncle (дядя), а от оставшихся забрали S и Am = Sam (Сэм).
Есть ещё версия, что изначально использовались не USA, а US Army, но поскольку образ Дяди Сэма - образ государства, то версия эта ошибочная.
